Our wines presentation of our products
The Castello di Oliveto's Estate covers 1200 hectares of natural landscape. Only the most sun-exposed areas are used for vineyards, letting the sun of the Florentine hills age the grapes of traditional Tuscan varieties, including: Sangiovese, Colorino, Canaiolo, Trebbiano and Malvasia.
Much of the estate's land is left wooded to keep the original natural environment intact, positive proof of a truly sustainable agriculture. The name Oliveto, meaning olive grove in Italian, is for the historic olive tree orchards that are still on the estate. Honoring tradition, the olives are harvested by hand and brought whole to the olive press, where they become a wonderfully fragrant extra virgin olive oil. Grapes are likewise harvested strictly by hand. The entire production process takes place within the winery, from fermentation to bottling.

It is a wine made with Cabernet Sauvignon and Merlot grapes. It is
produced in barrique, small French oak barrels which enhance the different
tastes and smells and given the bouquet to this round and full bodied
wine. The deep and long lasting smell reminds you of vanilla, liquorice
and red berry fruit. It is deeply ruby coloured with a garnet reflecting
the ageing. |

It is made with Sangiovese grapes and a small quantity of Merlot and
Cabernet Sauvignon grapes grown in the best vineyard of the Oliveto
Farm, and it is a wine with an elegant structure. The grapes have been
selected, fermented separately and finally assembled. It has been aged
in oak barrels for about 8 months and then in bottle for some months
to rest. It is deeply ruby-coloured, an elegant and long lasting bouquet
which reminds you of the small wild fruits and the light spices. Tannins
are smooth and deep and with a long lasting taste. Alcohol: 13% vol.
Temperature: 18°C It goes well with red meat and cheese cheese. |

It is one of the most typical and known DOCG in Tuscany. This wine
is made with Sangiovese, Colorino and a small quantity of Merlot grapes.
Oliveto Chianti has a brilliant ruby red colour and an elegant and
lingering aroma, evoking red berries such as black cherries and violets.
This wine has a soft and balanced flavour, with extremely fine taste
profile. |

This valuable distillate is made with the marc full of must from Sangiovese,
Merlot and Cabernet Sauvignon grapes. Thanks to the strict process of distillation and the accurate selection of the marc, this is a "grappa" with an unexpected freshness and fragrant scents of flowers. VIN SANTO DEL CHIANTI |

It is a DOC wine made with Trebbiano, Tuscan Malvasia and San Colombano
grapes. Following the traditional way of producing this wine, grapes
are well selected in the vineyard and left lying on typical Tuscan "cannicci" to
dry for about 3-4 months. Fermentation and aging in "caratelli" takes
at least 3 years. Oliveto Vin Santo is amber-coloured, with a good
clearness and fluidity. It has light scent of dried figs and candied
fruit which gives complexity and harmony to the wine. The taste has
a good balance in sweetness, rotundity and long lasting persistence.
Alcohol: 15,5-16% vol. Temperature: 16°C – 18°C It goes well with any
kind of desserts. |

BIANCO dei PAPI |

It is a white wine made with Chardonnay, Pinot and Vermentino grapes,
produced at a controlled temperature, to avoid the loss of the flavour.
Bianco dei Papi has a straw colour with a green tint, a strong and
fragrant bouquet and a fresh flower and honey scent. It has an aromatic
and well balanced taste. Alcohol: 12-12,5% vol. Temperature: 12°C – 14°C
It goes well with hors-d'oeuvres and fish or as an aperitif. |
VINO SPUMANTE BRUT |

This Spumante is made with Chardonnay and Pinot Bianco grapes, grown
in the selected vineyard of the Fattoria Oliveto. The formation of
the foam takes place in the modern autoclaves, following the Charmat
method, and later it matures in the wonderful wine cellars of the Castle.
Its colour is straw yellow, with a fine and persistent perlage. Its
scent is elegant with leaven flavour. It has a soft, complex and persistent
taste. It is very good as an aperitif and goes very well with fish
and sea food. |

The name "Fattoria Oliveto" is the evidence of the old vocation in
growing olive trees on the farm. At about 150 m. above sea-level, centuries
old olive trees have been grown in mostly clayey soil, according to
the traditional patterns or the modern monoconic plants. The varieties
are the most well known in the Chianti area: Frantoio, Moraiolo, Leccino
and Pendolino. The olive crop is strictly by hand, in November and
December, and cold pressed within 24 hours. The peculiarity of this
olive oil is the very low acidity, the dull green colour, the fruity
and strong smell and the richness of fragrance. |
